What To Do With Leftover Brisket? Brisket Tacos!

Last Saturday I got up at 5:30 in the morning to make brisket to have it ready in time for the Texans game. The girlfriend had several of her friends coming over to hang out in the entertainment room and watch the game.  This was my big chance to show off! After a few weeks of working with my grill and the acquisition of my trusty new Maverick thermometer, tender, juicy brisket was a snap. The problem? They were all women, who seem to be perpetually on a diet. I still had about a third of the brisket left at the end of the day. The big question became, what to do with all that leftover brisket?

Leftover Brisket

I have to apologize now for not taking pictures and writing about my experience cooking the brisket. With company over, there just wasn’t a lot of time. I promise I’ll do it the next time around.

Sunday morning, I decided to cut a few slices off the hunk of meat that was left over and chop it up for breakfast tacos. I tossed it in a pan with just a dab of olive oil and fried it up, mixed in about six beaten eggs and finished cooking.  After that, a nice big pile of cheddar and some corn tortillas heated in my trusty cast iron pan and that was it.  I also recommend putting a few drops of Cholula on top for a little kick.  I ate so much I almost wound up in yet another food coma. I’ll definitely be repeating this the next time around. Simple and quick, ready in under ten minutes.

A couple of nights later, I decided to go ahead and try making regular tacos for dinner. Again, I chopped some leftover brisket and fried it up with a dab of olive oil.

Chopped Leftover Brisket

I didn’t add any eggs this time but, rather just piled the chopped leftover brisket into some flour tortillas and topped it with some black beans, cheese, sliced avocados and tomatoes.

Brisket Tacos

These were good but, not as good as the breakfast tacos that I made on Sunday. That could potentially be due to leftover brisket burnout but, I don’t see how anybody could get burned out on brisket. :)

I did some looking around on the web for some other ideas to try the next time I end up with leftover brisket, other than making brisket tacos.  Here’s a few ideas that I stumbled across:

  • Shepard’s Pie.  (I saw this suggested in several different places.  Definitely a must try)
  • Brisket enchiladas
  • Brisket chili
  • Sliced brisket sandwiches (duh)
  • Nachos

Thanks Robert. Unfortunately, I didn’t get pictures of the breakfast tacos which were my favorite.
